 On Friday night I was very blessed to be able to do a surprise  at home date night for my hubby! I wanted to make something special for my hubby so I decided to do this drink! ( It is his favorite and the kids!) Keep your eye out for more recipes from our date night including healthy to die for chocolate dipped strawberries!!!

It reminds me of being in the Caribbean on a cruise! With all this snow we have been having it is nice to let in a little  sunshine! And with no sugar and the wonderful health benefits of coconut this is a recipe to make often!

Pina Colada Smoothie!

1 20 oz can of pineapple organic or in 100% pineapple juice

Blend on high speed in the blender until well blended and frothy!

Then add: 2 cups of organic coconut milk,  you can make  your own  (so you get no yucky additives and it is way cheaper!!)

or 1 can organic coconut milk

Blend on high


Add: 1 cup ice and blend until well blended

Pour into some pretty glasses and enjoy with those you love!

P.S. You would never guess that this is healthy for you!









I love cream  and coconut!! So when my mother in law sent me a recipe for this pie I was excited to try it! The recipe called for lots of sugar we don’t eat sugar so I tweaked it to make it healthy. And the result was very yummy and the pie was  ate in a very short amount of time!!

I have difficulties with my healthy pie crust so I will skip that for now lets just say it could give you nightmares if I told you about my pie crust making experiences, something always happens when I make them. It is unbelievable! So someday I will do a post about it but for now lets talk about creamy yummy pie filling!! (And don’t look to close at my crust)

1 “9inch” baked and cooled pie crust


A little less then 1/2 cup honey

1/4 cup arrowroot

21/2 cups whole raw milk or half and half

4 egg yolks

3 TB butter

1 tsp vanilla

1 cup shredded coconut

In heavy saucepan combine honey and arrowroot, whisk together egg yolks and milk together

Gradually whisk egg mixture into honey mixture bring to boil over medium heat whisking constantly boil for one minuet remove from heat

Stir in butter vanilla, and coconut

Place plastic wrap directly on custard to prevent film from forming

Let stand for 30 min

Spoon Custard into pie shell and chill until set


2 cups whipping cream

2 TB honey or maple syrup

1   1/2 tsp vanilla

To whip cream in mixing bowl beat cream until peaks form then add honey or maple syrup and vanilla and mix well top pie and refrigerate

If you want you can toast some coconut to put on top!! Just make sure you watch because the coconut goes from not done and white to very brown!!

To toast coconut  sprinkle 3 TB of coconut on baking sheet and toast at 350 for around 5 min stirring occasionally cool and top pie!!





 As Mothers how many times a day do we hear, “Mama I need help, Mama why, Mama how , Mama please, Mama more, Mama, Mama”? As a Mama, sometimes I will just not really pay attention to what is being said. But instead answer with yes, in a minute, that is fine, don’t make a mess, mmhmm, sure and so on.  I don’t always take the time to really think about what they are saying and how they are feeling.  Or to look into their eyes and show them that I care about what they are talking about and how they feel about things.

  When I make a point to look into my children’s eyes several times a day it so blesses my day. I see into their hearts. I see love shining there, as well as a zest for life that makes my day so much brighter!! They open up and share their hearts with me as they feel loved and respected! Just take a minute and look deep into their little eyes and tell them you love them. Tell them that they are a huge blessing in your life. You will be surprised by the wonderful response you will see! Life is made of moments. Enjoy every one!
